Working with active biodynamic botanicals is what she loves to do. The herbs are wildly growing between her vineyards. She is picking them during early summer season, when the ripeness is perfect and drying them gently to preserve the essential oils.
I love to feel the impact of herbs to the body – it’s an traditional old knowledge from Austria. I am using this knowledge about regional herbs to infuse my sparklings and give them not only the lively taste, but as well the healthiness of the Ingredients.
Freshly brewed Nettle- and Elderflower-tea is getting blended with grape must and directly filled inside the bottle to ferment naturally with wild yeasts. The aperitif-like sparklings are absolutely bone-dry and refreshing with a low alcohol content. Genuine botanical sparklings.
